Until recently [the building of Lowes and WalMart, odd “coincidence”, I’m sure] if you did that locally, the can it came out of would say Hormel. Now you are seeing Tex-Mex and interior Mexican cooking, which is OK, but not Baja.

I don't know, Bryan. Walk into a small cafe in New Mexico (not necessarily the trendy part) and order a bowl of chili. In some places, you'll get a bowl of mostly water, a respectable quantity of beans, and enough chili pepper to set fire to the place. Chili is the meat unless it is stated to be con carne, and BBQ doesn’t necessarily mean sauce of any kind.

But it will be different because it won’t be Baja Mexican. I’m not saying it won’t be good, but food is regional with different spices and modes of preparation used in each region.

Most people miss the regional differences in other countries. That can result in their missing out on some great meals because they didn’t like something with the same name, but from a different region.

Some people think Chili always has beans in it, or bar-b-que is always covered in a tomato sauce.

Bryan, if El Indio doesn't still exist, come to Houston: I can point you to a number of places at which you can buy a freezer-load of the genuine article, no matter what style of Tex-Mex or Mex-Mex you prefer. And that's any day of the year, not just Cinco de Mayo. I haven't looked at schedules this year, but there's usually plenty of Mexican food and drink and free entertainment available in the big city park. I used to attend when I lived across the street from that park, but that can't happen this year due to my injury, so I'll just have a margarita at home. (Sigh!)
